Mac N Cheese Fritters with Birdie’s Pimento Cheese
My friend, Ann Wright, sent me this pic a while back. She loves Birdie’s Pimento Cheese almost as much as we do! I posted it to Instagram, and from there it got a lot of attention. So I thought we’d put the recipe together to share. Ann got her original inspiration from a Pinterest post from The Kitchen Life of a Navy Wife, which in turn got a little inspiration from The Little Kitchen. With all parties involved being properly sourced and knowing that good cooking is a collaborative effort, here is our version of Mac N Cheese Fritters with Birdie’s Pimento Cheese.
1 cup of elbow macaroni 1 container of Birdie’s Pimento Cheese, Garlic Parmesan 3/4 cup flour 2 eggs, beaten 2 cups panko bread crumbs Vegetable oil, for frying Cook macaroni, and drain. Warm the Birdie’s Pimento Cheese in the microwave on low, or for about 30 seconds. You don’t want it to boil or burn. Stir the cheese into the elbows, and combine well. Chill the mixture for 1 hour. Scoop and roll into 1” balls, return to the refrigerator to chill again. Dredge each ball in flour, then egg, then the panko bread crumbs to coat. We used a counter top deep fryer, but you can use a skillet as well. Either way, 4-5 minutes at 350 is all you need. Remove to a paper towel. Sprinkle with some grated parmesan, or dip with ketchup.
