Garlic Pimento Cheese Puffs

These snackable, crunchy, bite-sized cheese puffs are so tasty, and one batch makes almost 30 of them. Use them as a dish for an appetizer or grab a handful for an afternoon snack. You can also freeze the puffs after they’re cooked to save for later.

8 oz unsalted butter

Pinch of salt

1 cup water

1 cup all-purpose flour, shifted

4 large egg

1/2 package (4 oz) Garlic Parmesan Pimento Cheese

Cook Time:25-30 minutes

Preheat oven 400°.

In a saucepan, combine the butter, salt and water over high heat. As soon as the mixture boils, remove from heat, and all at once add in the flour. Beat vigorously with a wooden spoon. Return the saucepan back to the heat and turn the heat down to low. Continue beating with the wooden spoon for 1 minute.

Remove from heat and place the batter in your mixer fitted with a paddle attachment. Add the eggs in one at a time on high speed. Add the pimento cheese. The dough should look smooth.

Either fill a pipping bag, fitted with a 1/2 tip, the mixture, and pipe 1-inch circles on parchment lined baking sheet, or use a small ice cream scoop. Bake for 25-30 minutes.
